Ceramic Bread Bowl Sourdough

Ingredients

  • 14.1 oz/400 g bread flour
  • 1 tablespoon instant yeast
  • 5.3 oz/150 g sourdough starter, freshly activated (within 24 hours)
  • .53 oz/15 g salt
  • 7.1 oz/200 ml lukewarm water

Instructions

  1. Add salt, flour, yeast, and starter to bread bowl. Attach bread hook to stand mixer.
  2. Turn mixer to speed 1 and slowly add lukewarm water. Mix until an elastic ball of dough forms, about 5 minutes.
  3. Remove dough from bread hook and form into ball. lightly coat the ball of dough in flour and place in bottom of bread bowl. Cover with lid and let rise for 3.5 hours.
  4. Gently remove dough from bowl and place onto floured surface. Shape the bread into boule by pulling 1/4 section of top of bread away and then folding back into itself. Rotate bread 1/4 and repeat. Do this until you have completed 3-4 rotations, it should get more difficult as you go.
  5. Line the baking lid with parchment paper (cut into circle) and place bread on it, smooth side up. cover with bowl and let proof at least 2.5 more hours.
  6. Score the top of the bread and bake at 450 degrees F (230 C) for 30 mins. Remove bowl and let bake 10 more mins until golden brown.
